Grillin' Time


The weather is beautiful so it's time to grill! We wanted to try something different for pizza night so we decided to throw it on the grill. I found a fellow blogger who shared the low-down on grilled pizza. It is really easy, something different, and taste great!


We didn't make our pizza crust since Trader Joe's sells raw crust for $.99!! They have whole wheat, italian herb, and regular crust. We usually use the whole wheat and italian herb. Rather than rolling out a full size pizza we cut our dough in half and made mini pizzas that fit on the grill much better.


It's simple...

Preheat your grill on high

Roll out your crust and brush olive oil on one side

Turn grill down to medium and place pizza crust on grates oil side down

Cook for about 4 minutes, oil other side, then flip

Top grilled side with sauce, cheese, and toppings

Close grill until cheese melts

Enjoy!

NJ shore cupcakes




I was asked to make cupcakes for my girlfriend's bachelorette party recently. There was no way I was going to show up with some Pillsbury box mix so I found this recipe for chocolate cupcakes. The recipe turned out to be so yummy and easy to make that I'll never ever buy a box mix again. These were fun to make and to add a flirty touch I piped on dyed frosting and added sprinkles.

Rachel's Last Fling Chocolate Cupcakes

2 cups all purpose flour
2 cups sugar
1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup shortening
3/4 cup water
2 large eggs
3/4 cup milk
1 teaspoon vanilla
4 ounces melted unsweetened baking chocolate

Preheat oven to 350 degrees. Line cupcake pans with paper liners.

Combine all ingredients into large mixing bowl. Mix at low speed for 30 seconds, and scrape bowl. Mix at high speed for 3 minutes.

Fill lines 1/2 to 2/3 full of batter. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.

Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely.

Frost when cupcakes are completely cool.
